This may be an obvious question, which is not so obvious. When I am insulating the Kegger box do I simply lay the insulation in the bottom spot on the floor then put the board down or do I put something beneath, between the floor/ground and the insulation.

Yes, just lay the insulation on the floor and use Great Stuff around the perimeter. It will hold the sheet in pretty well. You might want to put some plastic down if you are building the bar somewhere other then the final resting place.
